This is a rant. Yesterday, when it stotted down on and off all day, I dashed out during one of the brief dry spells for my paper and decided to have some cake from the nice coffee shop at the bottom of my street. I don’t eat in there often as it is ridiculously close to home but they do have nice home made goodies. I chose a piece of fresh cream victoria sandwich and, for later (honest, it’s still in the kitchen) a coffee sandwich. Not only were the slices miniscule but the cost for the two was £4.50. For takeaway! I could have bought a whole posh cake from M&S or Sainsbury’s for that, never mind making one myself. They were cutting 10 or 12 slices from a double height 8″ cake which, even with my dodgy arithmetic, works out at £22 – £25 per cake.

July 4, 2008To serve 4 as a side dish
3 firm nectarines
100g feta cheese, cubed
2 tbsp black olives
2 tbsp sharp vinaigrette
a handful of fresh mint leaves
Cut the nectarines, skin on, into small pieces and lay in a flat dish along with the feta and olives. Tear the mint leaves into small pieces and sprinkle over the rest of the ingredients, followed by the vinaigrette. Cover until ready to serve and only then gently toss the salad to combine all flavours. Delicious with grilled meats and fish.
